Single Ladies Mashed Potatoes

Ok, I’m obsessed with mashed potatoes. Nothing makes me feel warmer than eating a hot bowl before bedtime. Just what my body needs, carbs before going to bed.  I thought I was obsessed, but this lady is completely nuts, so to my future Craigs List hottie. I made this for you for your dark lonely nights.

2.5 Pounds White Potatoes (6-7, Peeled and chopped)

2 Teaspoons  Salt

1 Teaspoon Black Pepper

1/4 Cup Sour Cream

1/2 Cup Olive Oil

1/4 Cup Milk

1 Tablespoon Butter

Peel the potatoes and add them to a cold pot of water. Bring to a boil and cook for 15-20 minutes until your potatoes are easily poked with a fork. Drain the potatoes. For a smooth consistency I like to use a ricer.  Add the mashed potatoes back to the pot.  In a small pot heat up all the other ingredients (except the sour cream). Pour the liquid mixture into the potatoes in batches and mix. Add the sour cream at the end. If you want creamier potatoes add more liquid. It’s totally up to you.
