In planning my final home-cooked meal of 2010, I began to think about all the crazy things that happened in the world. Some people live a pretty crappy life and go through some horrible experiences. I guess it was good for me to actually reflect on how lucky I am.

Making things longer and more complicated does not make you smarter or necessarily make something taste better. Can a simple dish satisfy you as much as a complicated one? Did I waste 2010 dreaming up more complicated recipes when many people around the world would kill for a clean glass of water or a bowl of rice? The more I thought about it, the more motivated I became to honor simplicity in my last dish of 2010.
Here is the last dish I created in 2010. Beautiful, simple and delicious.

4 Tablespoons Butter

1 Tablespoon Olive Oil

1/2 Cup Half and Half

4 Ounces Mascarpone Cheese

1 Teaspoon Salt

1/4 Teaspoon Black Pepper

4 Roasted Red Bell Peppers (jarred is fine), sliced

1 Box Capellini, cooked

In a large pan, melt the butter and olive oil and medium heat. Once the butter has melted, add all the other ingredients except the red peppers. Cook for a few minutes until everything is combined and melted. Add the red peppers, then toss with the cooked capellini and serve.
