You know right when your flight is canceled or your connection is missed you are going to have a miserable 12 hours. You get on a bus, shuttled to some strange place and all of your humanity is about to end. You enter the hotel lobby and everyone is tired, miserable, dirty and European. The excitement you had of going home has now disappeared.

This has happened to me a few times, and yes, I do love getting into bed, grabbing a bag of peanut M&M’s, a Diet Coke and spending countless hours wondering why in the world is ABC on channel 5. I can’t understand how people live like this. Everyone knows CBS is 2, NBC is 4, Fox is 5, and ABC is 7, oh and Bravo is 18.

My cousin and his wife once did a brave thing and ventured out to an airport hotel restaurant during their layover. They could not believe how great it was. They loved it so much so that when I asked them how their trip was, this is one of the first things they mentioned. Either some human trafficker, from Tropoja, put a ruffie in their drink that night or the dumbasses at the MTA have been recruiting from the wrong CIA.

I decided to try one of the dishes they had at their lovely hotel and I must say it is amazing. I only use cilantro when I make Mexican and since Mexican food is my least favorite type of food I really never use it. This calls for fresh cilantro, which I’ve never had with pasta, some red pepper flakes and tomatoes. I’m now excited about my next layover in Austria.

Recipe: Rock Shrimp With Cilantro Pasta

Ingredients

  • 1 Box Orecchiette
  • 1/4 Cup Olive Oil
  • 1 Pound Rock Shrimp
  • 3 Cloves of Garlic – Sliced
  • 1/4 Teaspoon Red Pepper Flakes
  • 1/2 Teaspoon Salt
  • 1/4 Teaspoon Black Pepper
  • 4 Plum Tomatoes – Seeded and Chopped
  • 1 Tablespoon Cilantro – Chopped
  • 3 Tablespoons Heavy Cream
  • 1/2 Lemon – Zested

Instructions

  1. Heat the oil on medium heat for 2 minutes until nice and hot. Add the garlic and red pepper flakes and cook for 1 minute. Once your garlic has browned a little, add the shrimp, salt, black pepper and cook for 3 minutes until all the shrimp has turned pink. Add all the remaining ingredients and cook for another 3 minutes. Toss with 1 box of cooked Orecchiette and serve with grated Parmesan.

    Have to try this tonight! I love cilantro in paste. It’s great infused in sauce with garlic! Try culantro ( long leaf brother of cilantro).
